Diversity Bowls aka Buddha Bowls

Dr. Rupy Anja created this name. He is behind the Doctors Kitchen podcast and numerous cookbooks, though you may not always find them in the US. He is based in London, England.

Diversity Bowls is his name for a salad bowl that contains a multitude of colorful veggies. Lettuce, arugula, protein of some sort, hummus or chickpeas, lentils, pomegranate seeds, pumpkin seeds, nuts, carrots, celery, beets, and I could keep going! Add as many things as you can eat, without going over board. Keep mixing things up daily to engage your brain and tastebuds.

These mixed up bowls of salad and veggies are a great way to get your rainbow of colors everyday. The goal is 30 different plants a week including herbs! I so rarely get to that number. Another thing to work on as I attempt to add more veggies to my diet.

Shopping for a bunch of random things: Trader Joes is one my favorite places for this. Smaller quantities as compared to Costco. Many times Trader Joes has things that other stores do not. Asian stores are also good places to shop, if you have nice ones in your town. They frequently have lots of fresh, unusual produce along with herbs that you won’t see in traditional US super markets. Farmer’s markets are great places too. If you live where they have a year round market, take advantage of it! The local markets in Bend are limited to the summer months as our growing season is so short and the vendors from the Willamette Valley have no desire to drive over the Cascades in the middle of winter.
